Stupid Simple Sugar Free Oatmeal

Just like the name of this oatmeal.... this recipe is really easy to make! I'm not opposed to carbs (although I do eat a lot of low carb recipes), since they're essential to living and thyroid health! But, when I started eating a lower sugar diet, I needed an oatmeal that wasn't so shocking to my blood sugar. 




And that's how this super simple oatmeal was born... out of my desire to keep the carbs, but to make them as healthy as possible!




I don't know about you, but I love toppings on my oatmeal! (Thank you to all the hotel breakfasts that helped me realize how awesome oatmeal toppings are!)





Stupid Simple Sugar Free Oatmeal Ingredients
  • 1/2 cup old fashioned oats
  • 1.5 cups water
  • splash of heaving whipping cream
  • pinch of salt
  • spoonful of Pyure sweetener (or, sweeten to preference)
  • sprinkle of cinnamon (to taste)
  • 1 tbsp butter
  • walnuts
  • raisins

Stupid Simple Sugar Free Oatmeal Instructions

  1. Add water, heavy whipping cream, and old fashioned oats to a pot and bring to a boil.
  2. Once oatmeal has reached a boil, turn heat down to low and continue stirring as oatmeal thickens.
  3. When oatmeal is near desired consistency, add salt, cinnamon, and sweetener to taste. Then add butter and stir.
  4. Transfer oatmeal to a bowl and add walnuts and raisins, or your toppings of choice! 


And that's it! It doesn't get anymore simple than that.

Oh. My. Chocolate-y. G!! This sugar free, low carb, keto, and THM friendly chocolate frosting will kill any desire that you may have for "regular" frosting!

I remember my mom always making a chocolate cake with chocolate frosting while I was growing up and I've missed eating it since I started eating a lower sugar diet. This frosting has made me miss it no more!




This time, I used this frosting on a low carb chocolate cake. Next time, I'm going to use it on a sugar free vanilla cake! Heck, you could even make this frosting for a batch of brownies. You can't go wrong with chocolate frosting!




Sugar Free Chocolate Frosting Recipe

  • 1 cup Swerve confectioners sugar
  • 1/2 cup cocoa
  • 1 cup softened butter (2 sticks)
  • pinch of salt
  • 1 tsp vanilla
  • 2 tbsp heavy whipping cream
  • 1/2 cup melted Bake Believe semi-sweet chocolate chips


Sugar Free Chocolate Frosting Instructions

  1. Beat softened butter in a mixing bowl for 1 minute.
  2. Add the rest of the ingredients and combine with a mixer.
  3. If frosting is too thick, add more whipping cream until consistency is to your preference.
  4. Lick the spoon and enjoy!

Ok guys. This. Cheesecake. Is. The. Bomb!!!!!

Ty mentioned to me last week that he would really like some cheesecake. So last night, I looked on pinterest, changed/tweaked some recipes, and came up with this amazing creation to surprise him with!

I've been eating somewhere between THM and keto since hich school and I've never made a cheesecake that is this absolutely mouth watering. Seriously though, it can cause you to drool so be careful.

I'll keep the "blah, blah, blah." to a minimum and drop some more yummy looking photos below along with the recipe! Have any questions or comments? Drop a comment below!


Cheesecake Recipe

The cheesecake recipe "Chocolate Berry Wedding Cheesecake" can be found on page 332 in the Trim Healthy Mama Cookbook.


Cheesecake Crust Ingredients
  • 1 cup almond flour
  • 1/2 cup flax seed
  • 2 tbsp Pyure (or other stevia/erythritol blend)
  • 1 tsp cinnamon
  • 1 stick butter slightly melted

Blueberry Topping Ingredients

  • 2 cups frozen blueberries
  • 1/4 cup Pyure
  • 1/2 cup water
  • 1 tbsp lemon juice
  • good sprinkle of cinnamon
  • 1 tsp vanilla

Cheesecake Crust Instructions
  1. Preheat the oven to 375 degrees F. Grease your glass pie plate with coconut oil or an oil of your choice.
  2. Add all of the ingredients together.
  3. Stir together with a spatula and finish combining together with your hands (wash hands first!).
  4. Press evenly into pan and bake for roughly 10 minutes.

Blueberry Topping Instructions
  1. Add all ingredients to a medium pot or saucepan.
  2. Bring to a boil and let simmer on medium/high heat for 5-10 minutes.
  3. Turn to low/medium heat, stirring often for 10-15 minutes.
  4. Let sauce and cheesecake cool before adding as the topping!

Note: Once blueberry topping is added, drizzle with dark chocolate melted Bake Believe chocolate chips!

Hi there, I'm Alexandria! I'm a 21 year old girl living in small town, Auburn, Indiana. I currently live in the cutest little upstairs apartment with my husband Ty, and I'm about a 30 second walk from my job in downtown Auburn. Some of the things that I love about Auburn is the small town charm, Christian friendly community and the little coffee shops, restaurants, and boutiques that are so full of heart! Basically, walking around Auburn is like stepping into a Hallmark movie!

I'm passionate about a lot of different things. I've always tried to narrow down all the things that I enjoy, but I always feel like I put myself in a box every time that I do that. This blog and my instagram, are a way to share the things that I'm passionate about! I absolutely love coffee, color, Jesus, my husband, farmhouse, decorating, DIY, photography, graphic design, illustrating, being frugal (but cute!), etc...





I'm so blessed to currently be the manager of The Cupbearer Cafe in downtown Auburn. The Cupbearer is a Christ-centered coffee shop. I really enjoy being a part of it and it's definitely a job that includes my love of coffee, decorating, and design! Thankfully when I have an idea that needs brought to life, my guy Ty is willing to put it together for me! All he requires for payment is a Breve with extra espresso. ;)

This blog is a creative outlet for me. It's not a job, because I already have one. I don't have any set plans or goals, except to share things that I enjoy or that I think are beautiful. My IG and blog posts will most likely consist of the things that I love and that I'm passionate about.

I'm not sure what else to share right now except that if you don't already know me, I'm sure you'll get to know me more as I experiment with this blog. Thanks for reading!
